Artichoke, Spinach & Crimini Jasmine Rice Cakes with Ponzu Shrimp & Mango Salsa. Serves 4

Rice Cakes:
1/4 cup rough chopped artichoke hearts
1/4 cup chopped crimini mushrooms
1/2 cup chopped baby spinach
1 TBSP chopped garlic and shallots
1/4 cup finely chopped red onion
1 TBSP chiffonade basil
2 cups cooked jasmine rice
1 cup panko bread crumbs
1/2 cup mayonnaise
salt and pepper to taste
1/2 cup cooking oil

Ponzu Shrimp:
4 poached and chilled shrimp
1 tsp soy sauce
1 tsp cider vinegar
2 TBSP olive oil
Juice of 1 half each orange, lemon and lime
1 tsp chopped garlic
1 TBSP chiffonade basil
1 pinch chopped fresh parsley
Salt and pepper to taste

Mango Salsa:
1 cup diced fresh mango
1/2 cup fine diced red onion
1TBSP chopped cilantro
1 tsp chopped garlic
1 fresh romano tomato diced
1 tsp chili powder
2 tsp honey
2 chopped scallions
