Boursin

Boursin

Boursin is a savory herb spread made with soft cheese. Cream cheese is the most commonly available, but it can also be made with chevre. This recipe is a family favorite, good to spread on crackers, or stuff cherry tomatoes and snow peas for a special appetizer. Make ahead about one hour before serving to allow the flavors to blend together nicely.

Makes one cup

2 cloves garlic
2 Tablespoon chopped fresh basil
2 Tablespoons chopped fresh dill
1 Tablespoon chopped fresh chives
1/8 cup pitted black olives (optional)
2 Tablespoons softened butter
8 ounce package of cream cheese

Peel the garlic by lightly smashing with the side of a knife. Trim off the ends, and coarsely chop into quarters. Place in a food processor fitted with a steel blade. Add the herbs to the food processor and pulse until finely chopped, about 30 seconds. Add the black olives, if desired. Combine the butter and the cream cheese to the herbs, mix briefly again until well blended.

Transfer to a small bowl , cover and refrigerate until ready to use. Stores in the refrigerator for two weeks. Garnish with nasturtium flowers and serve with simple crackers or slices of bruscetta.
