Broccoli Rabe, Sun Dried Tomato & Plantains

Broccoli Rabe, Sun Dried Tomato & Plantains w/Balsamic Reduction. Serves 4
Ingredients:
2 bunches of fresh broccoli rabe
8 ea. julienned Sundried tomatoes
2 plantains halved and quartered
1 TBSP garlic and shallot mixture
1 TBSP finely chopped red onion
1 cup balsamic vinegar
1 tsp cooking oil
Method:
1.In a small sauce pan place red onion and balsamic vinegar and reduce to 1/3.
2.In a sauté pan heat cooking oil.
3.when hot add broccoli rabe
4.when broccoli rabe starts to soften add garlic and shallots
5.when garlic and shallots are sautéed add sun dried tomatoes and plantains.
6.When broccoli rabe is cooked place on a plate and drizzle with balsamic reduction.
