Champagne Apple Wood Smoked Free Range Chicken

Champagne Apple Wood Smoked Free Range Chicken ~ lightly roasted, grilled and served with Jicama Slaw. Serves 4

Ingredients: (chicken)
8 oz of champagne
2 cups rough chop granny smith apples
2 TBSP garlic and shallot mixture
2 tbsp liquid smoke
1 cup olive oil
1/2 cup honey
2 tsp fresh thyme
Salt and pepper to taste
4 8 oz free range chicken breasts

Method:
1.in a blender combine first 7 ingredients and blend well.
2.Add salt and pepper to taste
3.marinate chicken with apple champagne oil for at least 8 hours.
4.Lightly roast at 325 degrees Fahrenheit in a conventional oven until chicken reaches 125 degrees internally.
5.chill chicken
6.slice chicken on the bias and light grill
7.Serve chicken over top of jicama slaw.

Jicama Slaw:

2 cups of shredded jicama
1 cup of shredded carrots
1/2 cup finely chopped yellow pepper
1 tsp chopped fresh thyme
1 tsp chopped parsley
2 tsp honey
2 tsp cider vinegar
Salt and pepper to taste
