Cold Mexican Soup Serves 4

3 Tomatoes Diced
1 Red Pepper Diced
1 Medium Size Onion Diced
2 Seeded Jalapeño
1 Large Cucumber Diced
1 Ripe Avocado Diced
1/4 cup Red Wine Vinegar
1/4 cup Olive oil
3/4 cup Tomato Juice
1/4 cup Cilantro
1 TBSP Tabasco
1 Tsp Chili Powder
Pinch of Cayenne Pepper
Salt & Pepper TT

Combine 1st six ingredients in food processor. Pulse in food processor until they are almost pureed, leaving some pieces. Add liquids and process until well mixed. Add remaining ingredients and combine well. Serve chilled with homemade tortilla chips and drizzle with a cilantro sour cream.
