Gourmet Granola
Makes 10 cups
3 cups rolled oats
3 cups 4 grain hot cereal
2 cups raw whole almonds
1/4 sunflower seeds
1/4 cup sesame seeds
1/4 flax seeds
1/4 cup pepita seeds
1 tsp cinnamon
1 cup honey
3/4 canola oil
1 Tbsp vanilla
1 cup dried fruit (1/4 cup each of currants, raisins, blueberries, apricots)
Preheat oven to 350 degrees
In a large bowl mix all dry ingredients. Put all wet ingredients (honey, oil, vanilla) in a jar, close lid and shake until homogenized. Pour honey/oil mixture over dry ingredients and mix.
Spread mixture onto a 12’ x 15” sheet pan prepared with cooking spray or parchment paper or a Silpat mat. Bake 20-25 minutes until brown.
Using a large metal spatula, flip over chunks in pan. Reduce heat to 225o and continue to bake 1 hour. Cool until warm then sprinkle dried fruits over top. Once cool, pack into an airtight container. Serve with non-fat plain yogurt and fresh berries.
