Pistachio Rice Flour Crepes filled with Fresh Fruit

Pistachio Rice Flour Crepes filled with Fresh Fruit & topped with VT Maple Syrup. Serves 4

Ingredients:
3 eggs
1/2 cup heavy cream
1 cup rice flour
1/4 finely chopped pistachios
Pinch of salt
Seasonal fresh fruit
1 TBSP VT maple syrup
Mint leaves

Method:
1.cut fresh fruit and refrigerate
2.combine eggs and cream in a bowl and whip together
3.Add pistachios
4.Add rice flour as needed
5.add salt as desired
6.in a small skillet or crepe pan cook the crepes
7.fill crepes with fresh fruit.
8.drizzle maple syrup over crepe
9.garnish with fresh mint
