Ricotta Tortes

Ricotta Tortes
Serves 10

6 cups (3 pounds) ricotta cheese
1/2 cups grated parmesan cheese
4 eggs
1 tsp Salt
2 tsp fresh or dried sage*
Black pepper to taste
1/2 cup grated parmesan cheese

Preheat oven to 375 degrees

Combine all ingredients in a bowl but hold back the 1/2 cup of parmesan. Spoon mixture into a 10 spots of a buttered muffin pan. Sprinkle the 1/2 cup of parmesan over the top of each.

Bake 25-30 minutes until brown and firm. Serve warm or cool

*can substitute basil or tarragon or cilantro. If using cilantro you can also add 1 tsp chopped jalapeno peppers.
