Wild Boar Chops with Roasted Sweet Potato & Caramelized Red Onion Apple Jam

Yields: 2-3

Ingredients:
1 rack boar chops (cleaned and Frenched)
2 sweet potatoes (cut 1/2” thick)
1 red onion
1 granny smith apple (skinned and cubed)
1/2 cup sugar
1/2 cup sherry wine vinegar
1 cinnamon stick
1/2 cup parsley stems
Salt & pepper to taste
1 teaspoon orange zest
4 ounces unsalted butter
Olive oil

Boar Preparation:
Preheat oven to 375o. Season rack with salt, pepper and olive oil. Sear in a hot pan until golden brown on all sides. Put into oven for 5 minutes. Let rest for approximately 4 minutes before slicing off chops.

Sweet Potato Preparation:
Skin sweet potatoes and cut the round way 1/2” thick. Season with salt, pepper and olive oil. Roast until fork tender.

Onion Apple Jam Preparation:
Cut apples and onions into small cubes. Melt butter in sauté pan and add onions, salt, pepper and sugar. Sauté for about 20 minutes on medium high heat until golden. Add apples, vinegar, cinnamon stick and orange zest. Turn down heat and cook for 15 minutes. Add parsley at end.

Assembly:
Place sweet potato on plate, top with boar chops, add a dollop of onion apple jam and serve.
