A Wrinkle in Thyme

2 drinks in champagne flute
 
Fresh golden raspberries – about 1/4 cup
Simple syrup - 1/2 oz.
Chambord – 2 oz.
Vermont White Vodka (or some other good Vodka) – 2 oz.
Fresh Thyme – 2 sprigs taken from near top of branch
Passion fruit puree – 1/4 cup
Cranberry juice – 1/2 cup
Lime – 1/2 - juiced
Angostura Bitters – 2 drops
Champagne to top off

In shaker glass put raspberries, thyme, simple syrup & muddle together, crushing them together. Then add chambord, vodka, cranberry juice, passion fruit puree, lime juice, angostura bitters. Put ¾ cup ice in metal part of Boston shaker. Pour mixture into metal shaker and cover with shaker glass and shake, shake for about 10 seconds. Pour through martini strainer equally into 2 champagne flutes…about ¾ full. Hold each glass slightly angled and slowly pour in a good champagne. Holding glass at angle will cause it not to overflow. It will form a nice cream on top. As it settles a little, add a little more. Garnish on a long toothpick with raspberries.
